Footnotes: Highland Park 56 Year Old Highland Park 56 Year Old is the oldest and rarest whisky released by the Orkney distillery to date, with only 170 bottles produced worldwide. The whisky originates from an exceptional parcel of casks first laid down in 1968 and identified by Master Whisky Maker Gordon Motion in 2008 for their potential for extended maturation. The whiskies were married and re-racked into first-fill sherry-seasoned oak casks for further maturation. The 56 Year Old was ultimately drawn entirely from one previously unreleased, first-fill sherry-seasoned American oak puncheon and bottled at 47.1% ABV. The decanter and presentation case take their inspiration from Orkney's Standing Stones of Stenness, reflecting both the ancient landscape of the islands and the more than five decades of craftsmanship behind the whisky. Producer Tasting Notes: An alluring perfume of jasmine, lilac, sweet raisins and cloudy honey greets the nose, intertwined with aromas of old varnished oak, peat smoke and fresh pink grapefruit. The palace reveals a rich and complex tapestry of Seville orange peed dancing alongside coriander seeds and the smoky essence of lapsang souchong tea. As the velvety finish unfolds, intense woody spices mingle with honeyed oak, leaving a lingering aftertaste with a delicate trace of fragrant, heathery peat smoke.
